HOLIDAY COOKING: 5 1/2 MINUTE HOMEMADE CARAMEL CORN!!



I love Caramel Corn, but don't like how long it takes to make homemade
caramel.....Until I found this recipe!

I can thank my Stepmom for this wonderful recipe!
It is so fast and easy to make....not to mention amazing!!

The entire recipe is done in the microwave,
in less then 6 minutes cook time you have homemade caramel corn!!



INGREDIENTS:
  • 4 quarts of plain popped popcorn
  • 1 cup of brown sugar
  • 1/2 cup of butter
  • 1 tablespoon of molasses
  • 3 tablespoons of corn syrup
  • 1/2 teaspoon of salt
  • 1 teaspoon of vanilla
  • 1/2 teaspoon of baking soda
  • 1 large brown paper bag

DIRECTIONS:
  • POP POPCORN!  If you don't have a popcorn maker you can do what I do...
  • Heat a 1/4 cup of oil in a large saucepan over medium high heat
  • Add 1/3 cup of popcorn kernels
  • Cover and continue to move the pan over the heat until popcorn is all popped. 
  • This recipe makes 2qts of popped popcorn, so you will need to repeat this recipe.
  • Place all popped popcorn in a brown paper bag.
  • If you would like to add any nuts or other goodies to your caramel corn, now is the time!
  • CARAMEL TIME!!
  • In a large glass bowl, combine brown sugar, butter, molasses, corn syrup & salt

  • Place in microwave on high for 3 minutes.
  • Take out and stir to mix
  • Place back in the microwave for another 1 1/2 minute.
  • Have the vanilla and baking soda ready, you will need to work quickly from this point on!
  • Take out and quickly stir in vanilla and baking soda.
  • The caramel will bubble and steam (this is normal don't be scared! Ha!)
  • Caramel should turn to a pretty golden milky color

  • Pour caramel sauce over popcorn in brown paper bag
  • Shake ot coat
  • Place bag in microwave for 30 seconds

  • Take out and shake to coat again.
  • Return bag to microwave for another 30 seconds
  • Take out and shake
  • Spread caramel popcorn on a cookie sheet lined with wax or parchament paper
  • Let fully cool and dry before moving to a container.
  • ENJOY!
