HOW TO: GIVE YOUR DESSERT A MAKEOVER WITH CHOCOLATE ART!




This weekend we had a Wild Game Feast to attend.  Where we all share our 
bounty of wild game we have harvested for the year.  

I was in charge of bringing dessert, trying to stick with the "wild game" theme of the party
I did some simple chocolate art to add a cute Elk to my cheesecake. 

It looks so impressive, yet took minimal effort!  
Trust me, if you can trace you can do this!!


  • Find a picture online and print out in black & white to trace.
  • Tape the picture to your counter and place a piece of wax or parchment paper over the picture.  Also tape this down so it doesn't move on you while tracing.
  • Melt some chocolate chips in a sandwich bag, snip the corner to make a fine tip.
  • Trace your picture!
  • Once you have traced your picture to your liking, stick in the fridge to full set.
  • It will only take a few minutes depending on how thick your chocolate is.
  • Once set, the chocolate will easily peel right off the paper.
  • Place on your dessert and impress your party guest!

Chocolate Orange Cheesecake


INGREDIENTS:

Crust:
  • 1 ½ cups crushed Oreo Cookies or Chocolate Graham Crackers
  • 1/3 cup melted butter
Filling:
  • 3 Cream cheese bricks (8oz each)
  • 1 ¼ cups sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 3/4 cup whipping cream
  • 1 1/2 squares of unsweetend baking chocolate
  • 1/2 - 3/4 cup of Orange juice concentrate 

DIRECTIONS:

  • Grease bottom but not sides of a 9 or 10 inch springform pan.
  • Mix Crushed Chocolate cookies & Melted Butter
  • Press into the bottom and up the sides a bit of a greased springform pan.
  • In a mixer, cream the cream cheese and sugar
  • Add the 3 eggs one at a time until well combined
  • Then add vanilla extract and whipping cream
  • Blend until smooth
  • Divide mixture into 2 equal portions
  • To the first half of the mixture, stir in 1 ½ squares unsweetened baking chocolate, melted
  • Pour into bottom of the prepped springform pan.
  • To the second half of the mixture, stir in the orange juice concentrate
  • Carefully spoon this mixture over the top of the chocolate mixture already in the pan.
  • Place the springform pan in the middle of a large baking sheet and slide into the oven
  • pour warm water into the baking sheet to partially submurge the springform pan.
  • This is called a water bath & keeps the cheesecake moist while baking so it does not crack.
  • Bake at 325 degrees F for about 50 minutes to an hour or until the surface of the cake is no longer glossy and the center does not giggle. 
  • Remove from oven and immediately run a sharp knife around the edge of the pan to release the cake.  
  • Do not remove from the springform pan yet!
  • Place in the fridge for a few hours to fully cool and set.
  • Once cooled you can release from the pan and apply your chocolate art.

PUMPKIN SOUP COOKED IN A PUMPKIN ~ ONLY $9.70 FOR A FAMILY OF 6!!





Did you catch Thrift Thursdays yesterday?

I showed you how to make a delicious Pumpkin Soup cooked in a pumpkin on a budget of course!




Pumpkin Soup cooked in a Pumpkin for a family of 6 $9.70  
($3.23 a pumpkin that serves 2)

Price Breakdown:
·        $2.97 Baking Pumpkins (need 3 @ $.99 each at Albertsons)
·        $.54 Vegetables (3 potatoes, 3 cloves of garlic & 1 large onion)
·        $1.50 Chicken Broth (on sale at Fred Meyer $2/1)
·        $1.50  Half & Half (on sale for $1.99 at Albertsons – use 1 ½ cup)
·        $3.19 Asiago Cheese (on sale at Albertsons)


*Each Pumpkin will serve 2 people.  For a family of 6 I have done 3 pumpkins; the following recipe is for 1 pumpkin. 

Ingredients
  • ·        1 whole baking pumpkin, approximately 4 pounds, rinsed
  • ·        2 teaspoons vegetable oil
  • ·        1 tablespoon butter
  • ·        1/2 small yellow onion, diced
  • ·        1 teaspoon salt
  • ·        1 clove garlic, minced
  • ·        1 potato, peeled & chopped
  • ·        1 cup chicken broth
  • ·        1/2 half & half
  • ·        2oz Asiago cheese


Directions
  • ·        Heat the oven to 375 degrees F.
  • ·        Cut out the top of the pumpkin to make a lid by cutting around the stem at an angle.

o   Make sure the opening is large enough to work within.
o   Remove the seeds and fibers.  Reserve the seeds for another use.
o   Brush the exterior of the pumpkin and the lid with vegetable oil.
o   Oil a round casserole dish large enough to hold the pumpkin and place the pumpkin inside.
  • ·        Combine the butter, onion, salt, garlic, potato, chicken broth, and half & half in the hollowed pumpkin. Replace the lid of the pumpkin to cover.
  • ·        Bake at 375 degrees for 1 1/2 hours.
  • ·        Remove the lid; Add the cheese and bake an additional 30 minutes, uncovered.
  • ·        Remove the pumpkin from the oven, and gently scrape some of the flesh into the soup mixture.
  • ·        Puree with an immersion blender to desired consistency, being careful not to hit the sides or bottom of the pumpkin. (Don’t want a leak)!
  • ·        Serve immediately.

WE COOK: PUMPKIN PIE SHEET CAKE




While browsing Pinterest (go figure) 
I found this awesome recipe from Jamie Cooks it Up!

Pumpkin Pie Sheet Cake!
I love that she uses a yellow cake mix as the crust,
because I personally have yet to perfect the art of 
an amazing pie crust!

I can't wait to make this one this Fall!!



Pumpkin Pie Sheet Cake
Time: 15 minutes prep + 60 minutes to bake
Yield: 20 servings
Recipe from my mother in law, Jill Eskelson

Crust:
1 yellow cake mix
1/2 C butter, melted
1 egg

Filling:
1  29 ounce can pumpkin 
1 1/2 C sugar
1 t salt
2 t cinnamon
1 t ginger
1/2 t cloves
4 eggs
2  12 ounce cans evaporated milk
 
 

1. To make the crust, pour the cake mix into your stand mixer, or medium sized mixing bowl. Pour the melted butter over the cake mix and stir it in for about 30 seconds. Add your egg and mix until all ingredients are well combined. 


2. Spray a large jello roll pan (mine is 11 1/2 by 16 1/2) with cooking spray. Press the crust into the pan. 


3. Into a small mixing bowl combine the sugar, salt, cinnamon, ginger and cloves. 


4. Crack the eggs into your stand mixer and beat them for about 1 minute, or until frothy. 


5. Add the sugar mixture



and the pumpkin and mix until combined.



6. Pour in the canned milk and mix until combined. 



7. CAREFULLY pour the filling over the crust. Now. Just a word to the wise here. Your pan will be full. Really full. The kind of full that just might spill over the top while you carry it to the oven, if you aren't careful. I would advise setting the crust as close to the oven as possible, then pour the filling in so you don't have very far to walk. 
8. Bake at 350 degrees for 1 hour, or until a knife inserted into the middle comes out clean. 
9. Cool completely, then cut into squares and serve with whip cream.

CHEERS TO A NEW YEAR: DAY 5!!




Wassail Bowl Punch Recipe

Ingredients

  • 4 cups hot brewed tea
  • 4 cups cranberry juice
  • 4 cups unsweetened apple juice
  • 2 cups orange juice
  • 1 cup sugar
  • 3/4 cup lemon juice
  • 3 cinnamon sticks (3 inches)
  • 12 whole cloves

Directions

  • In a 5-qt. slow cooker, combine the first six ingredients. Place the cinnamon sticks and cloves on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add to slow cooker.
  • Cover and cook on high for 1 hour or until punch begins to boil. Discard spice bag. Serve warm. Yield: 3-1/2 quarts.




Hot Bacon Cheese Spread Recipe




Ingredients

  • 1 unsliced round loaf (1 pound) Italian bread
  • 2 cups (8 ounces) shredded Monterey Jack cheese
  • 1 cup (4 ounces) shredded Parmesan cheese
  • 1 cup mayonnaise
  • 1/4 cup chopped onion
  • 5 bacon strips, cooked and crumbled
  • 1 garlic clove, minced

Directions

  • Cut top fourth off loaf of bread; carefully hollow out bottom, leaving a 1-in. shell. Cube removed bread and set aside. Combine the remaining ingredients; spoon into bread bowl. Replace top. Place on an ungreased baking sheet.
  • Bake at 350° for 1 hour or until heated through. Serve with reserved bread cubes. Yield: 2 cups.
