Stockpile Cooking - Lime-Butter Dill Chicken



Lime-Butter Dill Chicken


Here is another one of my family favorites. 
It is so simple to make!

I like to serve it with a cheap rice or pasta side and a veggie, usually salad
but I hadn't made it to the store yet so I pulled out some FREE frozen veggies.


Ingredients:
  • Chicken Breast (how ever much you think you will need to serve your family)
  • Limes, usually 1 lime to 2 chicken breast  (depending on how juicy they are)
  • Dill - if fresh I use 1 sprig per chicken breast.  If dried 1 Tbs. per chicken breast.
  • Butter - 1-2 Tbs per chicken breast.  (I like to start with 1 and add more if there isn't enough sauce)
Directions:
  • Cut chicken breast into equal chunks so they will cook evenly.
  • Melt butter in a sautee pan over medium-high heat.
  • Juice limes and place in the pan with butter.
  • Once butter is fully melted add chicken and the dill.


  • Cover and let simmer until chicken is almost fully cooked about 10 minutes.
  • Remove lid and allow to continue to cook.
  • You are wanting the liquid to reduce to a nice sauce and for the chicken to brown up.
  • This is where the extra butter may be wanted.  There is so much water in the chicken that it often will just evaporate instead of reduce, if this happens just add a little more butter to make a sauce.
