STOCKPILE COOKING - MALIBU CHICKEN



MALIBU CHICKEN


Malibu Chicken is one of my families favorite dinners. 
I love it because it is super fast and easy to make!

There are plenty of different ways to make it, this is my version!




Ingredients:
  • Boneless Skinless Chicken Breast (click here to get fresh chicken for $1.49 lb)
  • Ham Slices
  • Pineapple (use fresh or canned rings, chunks or crushed)
  • Swiss Cheese (also good with cheddar or mozzarella)
Directions:
  • Place 1 chicken breast at a time between plactic wrap
  • Pound chicken to desired thinness
  • Cut flattened chicken in half (makes smaller portions)



  • Melt butter in a skillet over medium high heat

  • I put mine on 8, you want the pan to be very hot so it will brown the chicken quickly without overcooking since the chicken is so thin.
  • Place as many chicken pieces as you can at one time in the skillet
  • cook on each side until golden brown.  (about 1 minute on each side)


  • While chicken is cooking, turn your oven on to 350
  • Cover a cookie sheet with foil (makes for easy cleanup)
  • Once chicken is golden brown on each side place on cookie sheet
  • Now for the malibu part...
  • Top each piece of cooked chicken with a slice of ham, pineapple and swiss cheese
  • Place cookie sheet in the oven just until cheese is melted
