Stockpile Cooking.....Pulled Pork Sandwiches with Spicy Coleslaw!

  • Tonight I will be using the leftover Pork from the Crockpot Carnitas I made last night at will be making
  •  Pulled Pork Sandwiches
  • Spicy Coleslaw
  • Grilled Fries

For the Pork
I just put it in the Crockpot with BBQ sauce and let simmer all day. (easy enough right?!)


 
Coleslaw
  • 1 small head of cabbage or 1 16oz bag of already shredded cabbage
  • 1/4 cup Mayo
  • 2 Avocados
  • Juice of 1 Lime
  • 1 Tbs. of Hot Sauce
  • 1 Bunch of Cilantro
  • 1 Jalapeno seeded
Shred cabbage and place in bowl, set aside.  In the food processor or blender mix all other ingredients to make sauce.  Pour over shredded cabbage and toss to blend well.  Put in fridge to marinate (the longer it sits the yummier it is)!


 
Grilled Fries
I like to make these on the BBQ but the oven would work also!  Drizzle Olive Oil on a cookie sheet and place on BBQ to heat.  Meanwhile, Cut potatoes into fries at whatever thickness you want, place on hot cookie sheet and sprinkle with seasoning of choice (I like to use Garlic Salt).  you will want to flip the fries over half way through cooking so both side get crispy.  Grill until crispy on the outside and tender on the inside.
