what you need

lb.  (16 oz.) VELVEETA®, cut into 1/2-inch cubes
1
can  (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained

make it

MIX ingredients in 2-qt. microwaveable bowl.
MICROWAVE on HIGH 5 min. or until VELVEETA is completely melted, stirring after 3 min.
SERVE with assorted cut-up fresh vegetables, WHEAT THINS Original Snacks or tortilla chips.

STOCKPILE COOKING: SUMMER SQUASH BAKE!


Summer Squash Bake recipe

If you have a garden or family/friends with family I'm sure you are 
overloaded with all sorts of Delicious Squash!

I'm going to make this tonight for a great summer side to along with dinner!



what you need

2
small  zucchini, thinly sliced
1
small  yellow squash, thinly sliced
4
 eggs
1/2
cup  MIRACLE WHIP Dressing
1/3
cup  KRAFT Grated Parmesan Cheese
1
cup  KRAFT Finely Shredded Italian* Five Cheese Blend
1
small  onion, chopped
1/2
cup  chopped green peppers
1/4
tsp.  each salt and black pepper

make it

HEAT oven to 375°F.
HEAT large skillet sprayed with cooking spray on medium heat. Add zucchini and yellow squash; cook and stir 5 min. or until crisp-tender.
BEAT eggs and dressing in large bowl with whisk until well blended. Stir in Parmesan. Add zucchini mixture and all remaining ingredients; mix lightly. Spoon into 8-inch square baking dish.
BAKE 35 to 40 min. or until center is set and edges are lightly browned.

STOCKPILE COOKING - BRUSCHETTA CHICKEN SKILLET


Bruschetta Chicken Skillet recipe

Is your garden going crazy with tomatoes yet?

Besides salsa, this recipe would be a great way to use some of them up!
I love fresh Bruschetta & am excited to make this chicken dish.

I'm making this for dinner tonight but am going to make a few substitutions.  
I highlighted them in red in case you would like to do the same!



what you need

1/4
cup  KRAFT Sun Dried Tomato   Vinaigrette Dressing  - Bruschetta is normally made with Balsamic Vinegar so I am going to use Balsamic Vinaigrette Dressing instead

small  boneless skinless chicken breast halves (1 lb.)

large  red peppers, chopped
2
cloves  garlic, minced
2
cans  (14-1/2 oz. each) pasta-style orItalian-style diced tomatoes, undrained - I'm going to use fresh tomatoes
1/2
cup  water
2
cups  instant white rice, uncooked  - I'm going to use Uncle Ben's Wild Rice
1
cup  KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1
large  tomato, chopped
2
Tbsp.  chopped fresh basil

make it

HEAT dressing in large skillet on medium heat. Add chicken, peppers and garlic; cover. Cook 10 min. or until chicken is done (165ºF), turning after 5 min. Remove chicken from skillet; cover to keep warm.
ADD canned tomatoes, water and rice to skillet; stir. Bring to boil; simmer, uncovered, on low heat 10 min. Meanwhile, combine cheese, fresh tomatoes and basil.
RETURN chicken to skillet; top with cheese mixture. Cook, covered, 5 min. or until chicken is heated through and cheese is melted.

SUBSTITUTE
Substitute KRAFT Zesty Italian Dressing for the tomato dressing.
HOW TO SAFELY HANDLE RAW CHICKEN
Always wash hands, preparation surfaces and utensils in hot, soapy water before and after contact with raw chicken. Dry hands and surfaces with a clean towel or paper towels. Take special care in washing worn cutting boards as there may be hard-to-clean grooves or cracks that can collect bacteria.

STOCKPILE COOKING: LAYERED CAESAR, SHRIMP & PASTA SALAD

I can't wait to make it for my family!!




what you need

1/4
cup  KRAFT Lite Creamy Caesar Dressing
1/4
cup  KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
1
clove  garlic, minced
1
pkg.  (6 oz.) torn mixed salad greens, divided
2
cups  medium shell macaroni, cooked, drained and cooled
1
large  tomato, coarsely chopped
3/4
cup  seasoned croutons
2
 hard-cooked eggs, sliced
1/2
lb.  frozen cooked cleaned mediumshrimp, thawed
1/4
cup  KRAFT Shredded Parmesan Cheese

make it

MIX dressing, mayo and garlic.
LAYER half the salad greens, macaroni and tomatoes in 3-qt. bowl. Cover with layers of remaining greens, croutons, eggs, shrimp and cheese. Refrigerate dressing mixture and salad 1 hour.
ADD dressing mixture to salad just before serving; mix lightly.

HOW TO MAKE YOUR OWN CROUTONS
Heat 1 Tbsp. olive oil and 1 tsp. minced garlic in medium skillet on medium heat. Stir in 1 cup French bread cubes; cook 3 to 4 min. or until crisp and golden brown, stirring frequently. Cool completely.
SUBSTITUTE
Substitute KRAFT Lite Ranch Dressing for the Caesar dressing.
MAKE AHEAD
Salad and dressing mixture can be refrigerated up to 4 hours before tossing salad with dressing mixture just before serving.

WE COOK: CHICKEN CLUB PIZZA

I know my family would love this one!



what you need

1
can (13.8 oz.) refrigerated pizza crust
1/4
cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
1/2
cup KRAFT Classic Ranch Dressing, divided
1-1/2
cups KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA, divided
1-1/2
cups finely chopped cooked chicken
8
slices OSCAR MAYER Bacon, cooked, crumbled
1-1/2
cups finely shredded lettuce
1
tomato, finely chopped

make it

HEAT oven to 400ºF.
UNROLL pizza dough on baking sheet sprayed with cooking spray; press into 15x10-inch rectangle. Bake 10 min.
MIX mayo and 1/3 cup dressing; spread onto crust. Top with half the cheese, chicken, remaining cheese and bacon.
BAKE 5 min. or until crust is deep golden brown and cheese is melted. Top with lettuce and tomatoes; drizzle with remaining dressing.

WE COOK: SOUTHWEST AVOCADO BEAN DIP!



Southwest Avocado Bean Dip recipe


I love dips, they are the best entertainment foods!
Here is a yummy one from Kraft Foods, this one would be easy to sneak in 
some extra veggies on everyone!



what you need

1/2
cup chopped avocados
1/2
cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
3
Tbsp. fresh lime juice
1/4
tsp. ground cumin
1/4
tsp. salt
1
can (19 oz.) black beans, rinsed
1
pkg. (10 oz.) frozen corn, thawed
1
tomato, chopped
2
Tbsp. chopped fresh cilantro
WHEAT THINS Toasted Chips Multi-Grain

make it

MASH avocados in large bowl; stir in sour cream, lime juice, cumin and salt.
ADD all remaining ingredients except chips; mix well.
REFRIGERATE 15 min. Serve with chips.

MAKE AHEAD
For added convenience, this tasty dip can be prepared ahead of time. Just press piece of plastic wrap directly onto surface of dip, then refrigerate up to 24 hours. Stir well before serving.
SERVING SUGGESTION
Serve with WHEAT THINS Original Crackers.
CREATIVE LEFTOVERS
