STOCKPILE COOKING - BART'S BLACK BEAN SOUP!

Bart's Black Bean Soup Recipe


Beans Beans the Musical Fruit.....

I love beans, they are such a great source of fiber and protein!
Not to mention a very inexpensive meal to prepare!


This recipe is a very fast one that is done in the microwave,
of course you could always make this in your crockpot!


  • 4 Servings
  • Prep/Total Time: 10 min.
  • 5 5 10

    Directions

    • In a microwave-safe bowl, combine the first five ingredients. Cover and microwave on high for 2 minutes or until heated through. Pour into four serving bowls; drizzle each with lime juice. Sprinkle with cheese and green onions. Yield: 4 servings.


    Editor's Note: This recipe was tested in a 1,100-watt microwave.
    Nutrition Facts: 1 cup equals 229 calories, 8 g fat (6 g saturated fat), 32 mg cholesterol, 1,004 mg sodium, 23 g carbohydrate, 5 g fiber, 12 g protein.

    • 1 can (15 ounces) black beans, rinsed and drained
    • 1-1/2 cups chicken broth
    • 3/4 cup chunky salsa
    • 1/2 cup canned whole kernel corn, drained
    • Dash hot pepper sauce
    • 2 teaspoons lime juice
    • 1 cup (4 ounces) shredded cheddar cheese
    • 2 tablespoons chopped green onions

    STOCKPILE COOKING - APPLE NACHOS


    Apple Nachos

    Apple Nachos Recipe

    Tis the Season to eat Apples...Fa...lalalala...lala...lala

    Here is a fun creative way to serve your apples!

     

    Directions

    • In a microwave-safe bowl, melt caramels with water; stir until smooth.
    • Meanwhile, in a large saucepan, melt marshmallows and butter. Arrange apple slices on a large platter. Drizzle with caramel; top with marshmallow mixture. Sprinkle with peanuts, chocolate chips and sprinkles. Serve immediately. 
    Yield: 24 servings.

    Nutrition Facts: 1 serving equals 149 calories, 6 g fat (3 g saturated fat), 8 mg cholesterol, 76 mg sodium, 25 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 1-1/2 starch, 1 fat.

    • 36 caramels
    • 1 tablespoon water
    • 30 large marshmallows
    • 1/3 cup butter, cubed
    • 4 medium tart apples, peeled and cut into 1/4-inch slices
    • 1/3 cup chopped dry roasted peanuts
    • 1/3 cup miniature semisweet chocolate chips
    • 3 tablespoons Halloween sprinkles

    April Fools - In the Kitchen

    I really don't know why I am so amused by this holiday.....It is so predictable and yet I love every minute of it!

    My Kids are on Spring Break this week so I will be "PRANKING" them all day!

    I found some super cute April Fools Meal Ideas that I will be doing!

    BREAKFAST:  Magic Milk Bowl
    Recipe From FamilyFun Magazine

    Magic Milk Bowl

    Ingredients:
    • Liquid Food Coloring
    • Cereal  (I think I have some of that around) HA!
    • Milk
    To set up the trick, squeeze several drops of liquid food coloring over the bottom of a bowl, then pour in dry cereal to conceal the droplets. When a family member sits down to his cereal and adds some milk, he'll think he's entered a Technicolor twilight zone.


    LUNCH:  GRILLED CHEESE & JELLO JUICE

    Grilled Cheese for April Fools' Day


    Ingredients:
    • Pound Cake
    • Butter or White Frosting
    • Yellow and Red Food Coloring
    Cut the pound cake into bread-like slices and toast them in a toaster oven just until they turn golden brown. Once they've cooled for a few minutes, stack two slices for each sandwich and cut the stack in half diagonally (slicing the sandwich before you fill it makes for fewer crumbs).
    Now tint the frosting by stirring in a few drops of yellow and red food coloring (more yellow than red) to get a shade of orange that resembles American cheese.
    Carefully spread frosting between the slices of each half sandwich. If you mound the frosting on one slice, then top it with the other and gently press down, the frosting will ooze out a bit and look all the more like melted cheese. Makes one sandwich.

    JELLO JUICE:
    Make any flavor jello by instruction on the box.  Pour into glasses and insert a straw.  Stick in the fridge to set.  Serve to you kids and let the giggles begin as they try to sip this non-sipping juice.

    Colorful Cupcakes

    Ingredients:
  • 1 pound lean ground beef
  • 1/2 cup seasoned bread crumbs
  • 1 cup grated Monterey Jack cheese
  • 3 tablespoons ketchup
  • 1 egg
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon pepper
  • 3 cups mashed potatoes
  • Food coloring

    1. Heat the oven to 375 degrees. Line 12 muffin tin cups with foil bake cups.
       
    2. In a large bowl, mix together all of the meat loaf ingredients until well combined. Divide the mixture evenly among the lined cups (the liners should be about three quarters full).
       
    3. Place the filled muffin tins on cookie sheets and bake the cupcakes for about 15 minutes or until cooked through.
       
    4. Divide the mashed potatoes among three small bowls and stir a few drops of food coloring into each batch to create blue, yellow, and pink pastel frosting. Spread a generous dollop on each cupcake. Makes 12 cupcakes

    Sweet Sushi:


     Sweet Sushi


    Ingredients:
    • 1/4 cup butter
    • 4 cups mini marshmallows
    • 6 cups crisped rice cereal
    • 20 to 25 gummy worms
    • 1 to 2 boxes of fruit leather
    • 12- by 17-inch baking sheet
    • 2-quart saucepan
    1. Grease a 12- by 17-inch baking pan.
    2. Melt butter in a 2-quart saucepan over medium heat.
    3. Add the marshmallows and stir until smooth.
    4. Remove mixture from heat and stir in the rice cereal until it's evenly coated.
    5. Turn the baking sheet so that the shorter ends are at the top and bottom. Then press the marshmallow mixture on the sheet, distributing it evenly.
    6. Starting at one side and 1 inch up from the lower edge, place gummy worms atop the mixture end to end in a horizontal line.
    7. Gently roll the lower edge of the marshmallow mixture over the gummy worms.
    8. Then stop and cut the log away from the rest of the mixture. Use the same method for 4 more logs.
    9. Slice each log in 1-inch-thick "sushi" rolls and wrap them individually with a strip of fruit leather.
