WE COOK: TWINKIE CUPCAKE FOR ONE (ONLY 85 CALORIES)!!





Undressed Skeleton is a new blog I found and already in love.  
The blog is about a girls journey to get healthy; she loves to bake so is always 
posting great "healthy" versions of sweets we all want.

She has also started posting her daily lunch which always looks yummy!



Ingredients:
- 1 Tbsp Scrambled Egg (I used Carton Egg)
-1/2 Tbsp light Butter (I used earth balance)
-2 Tbsp  Unsweetened Almond Milk
-1/4 Tsp Vanilla
-3 1/2 Tbsp Whole Wheat Flour
-1/4 Tsp Baking Powder
-2 Packets Truvia
-Itty Bitty pinch of salt
-4 Tbsps Fat Free Reddi Whip 

Directions

1. In another small mixing bowl combine all dry ingredients.
2. Mix together all wet ingredients with butter, slowly mix in dry ingredients 
3. Preheat oven to 350 degrees.
4. In a cupcake liner add  batter 3/4 full.
5. Bake for 7-10 Minutes.
Filling
-Take a spoon and scoop out 1 tbsp of the cupcake center center
-Fill the Cupcake with 2 tbsps of whip cream.
-Top the cupcake with another 2 tablespoons of whip cream

This is a perfect dessert when you are trying stay healthy and fit. The cupcake absorbs the whip cream and it really taste just like a Twinkie! I love making cupcake singles that way I don’t eat all the cupcakes! Another thing I love doing with this recipe is adding fruit!
