BLUE CHEESE SCALLOPED POTATOES
As you can see I filled my dish way to full, I hate when it bubbles over!
This is my husbands favorite potatoes!
If you like blue cheese you will love these!
*Warning - these are very healthy!
- 5 small red potatoes
- 1 cup of blue cheese crumbles
- 1/2 a brick of cream cheese
- 1 1/2 cups of milk (or cream if you want them to be extra healthy)
- 1/2 Tbs. of black pepper
- 1 clove of garlic (crushed)
- 1 small onion, diced (about 1 cup)
- Bread crumbs to cover top of dish (amount will depend on size of dish)
- Preheat oven to 400 degrees
- Place blue cheese, cream cheese and milk in a microwave safe bowl.
- Put in Microwave for 2 minutes, stir.
- If not melted, Microwave for 1 minute at a time until fully melted and blended together.
- Stir in black pepper, garlic and diced onion
- Meanwhile, slice potatoes to desired thickness
(remember the thinner the slices the quicker it cooks) - Coat desired baking dish with non-stick spray.
- Start layering potatoes and cheese mixture starting with the cheese first.
- Continue until dish is full.
- Cover dish (if your dish doesn't have a lid use tin foil.
- Place in oven and let cook untouched for 1 hour
- After an hour, uncover and top with bread crumbs
- Let cook awhile longer until bread crumbs are golden brown.
ENJOY!
