STOCKPILE COOKING - BLUE CHEESE SCALLOPED POTATOES



BLUE CHEESE SCALLOPED POTATOES


As you can see I filled my dish way to full, I hate when it bubbles over!


This is my husbands favorite potatoes! 

If you like blue cheese you will love these!

*Warning - these are very healthy


Ingredients:
  • 5 small red potatoes
  • 1 cup of blue cheese crumbles
  • 1/2 a brick of cream cheese
  • 1 1/2 cups of milk (or cream if you want them to be extra healthy)
  • 1/2 Tbs. of black pepper
  • 1 clove of garlic (crushed)
  • 1 small onion, diced (about 1 cup)
  • Bread crumbs to cover top of dish (amount will depend on size of dish)
Directions:
  • Preheat oven to 400 degrees
  • Place blue cheese, cream cheese and milk in a microwave safe bowl. 

  • Put in Microwave for 2 minutes, stir.
  • If not melted, Microwave for 1 minute at a time until fully melted and blended together.
  • Stir in black pepper, garlic and diced onion

  • Meanwhile, slice potatoes to desired thickness
    (remember the thinner the slices the quicker it cooks)
  • Coat desired baking dish with non-stick spray.
  • Start layering potatoes and cheese mixture starting with the cheese first.
  • Continue until dish is full.
  • Cover dish (if your dish doesn't have a lid use tin foil.
  • Place in oven and let cook untouched for 1 hour
  • After an hour, uncover and top with bread crumbs
  • Let cook awhile longer until bread crumbs are golden brown.


ENJOY!
Careful - these taters will be very hot!
